January Times

Soooo, it's been a while. Not exactly sure why, but maybe because I've really been trying to read more...  currently I'm about to (finally) finish One Thousand Gifts (so many gold nuggets of wisdom in in this book!) and have just started Nourishing Traditions, a book/cookbook on health & healthy cooking that my amazing sister Heather gave me as a house warming gift :).

So far, this month has been filled with the pretty usual, day to day, nothing really "big" going on. But really, isn't every single day such a huge gift from the Lord? I so don't deserve his goodness to me.
Monday nights have become our Downton Abbey nights, versus watching it Sunday night since we don't want to stay up late. It's been the perfect thing to look forward to on Monday nights. I've been getting to know some other Marines' wives better and am coming to really have some great friends! I am so grateful. :)The weather has been all over the place this month, from 60 degrees and sunny to 9 degrees and snowing all in a matter of 4 days!! The first real snow came today, about 3 inches, and it is so lovely! I just keep thinking about and praying Daniel stays warm being outside all day... and to nourish that hardworking man I've been making dinners & meals like these:

Jamaican Red Bean Soup
Whole Wheat Pancakes (minus the artificial sweetener)
Three-Cheese Fondue (for a date night)
Chicken-pot-pie (my own recipe I have yet to write down)
Peanut-Thai Broccoli stir-fry (recipe to come soon!)
Also, I've started making my own Sauerkraut! You can see it's health benifits, history & how to make it here!
Lastly, lots of tomato soup & grilled cheese with pickles. Can you say cozzzzy? ;)
